    Cherry Chip Cornflake Cookies

    Cherry Chip Cornflake Cookies 2 ¼ c. all-purpose flour, sifted 1/8 tsp. salt 1 c. butter, softened ½ c. sugar 1 egg 1 tsp. almond flavoring 3/4 c. cornflakes 1 c. cherry chips Preheat oven to 375°. In a small bowl sift flour and salt together, set aside. In a large bowl, cream butter and sugar until light and fluffy. Mix in egg and almond flavoring. Add flour and mix till smooth. Stir in cornflakes and cherry chips. Roll into one-inch balls and place onto ungreased cookie sheets. Press with fork and sprinkle with sugar, if desired. Bake at 375° for 12–15 minutes.

    Sweet & Sour Skillet Chicken

    Sweet & Sour Skillet Chicken 1 large onion, sliced 1 fryer chicken, cut into serving pieces 2 tsp. salt 1/4 tsp. pepper 1/2 c. marinara sauce 2 Tbl. mustard 1/4 c. vinegar 1/2 c. maple syrup Slice onion and place in the bottom of a large skillet. Arrange chicken, skin side up, on top of onions. Sprinkle with salt and pepper. Combine remaining ingredients and 1/2 cup water and pour over chicken in skillet. Cook on medium heat, covered, for 10 minutes. Reduce heat to low and simmer, covered for 1 hour. Basting occasionally. Cook until chicken is tender.

    Spaghetti Pie

    Spaghetti Pie   6 oz. spaghetti 2 teaspoons butter 1/3 cup grated Parmesan cheese 2 eggs, beaten 1 pound hamburger about 30oz. tomato sauce or 1 – 15oz. tomato sauce plus 1 – 15oz. can stewed tomatoes, pureed ½ cup shredded mozzarella cheese   Cook spaghetti according to package directions. Drain (should have 3 cups cooked spaghetti). Stir butter in hot spaghetti. Stir in Parmesan cheese and eggs. Make a “crust” our of this in buttered 10” pie pan. Cook beef. Drain well. Stir in tomato mixture, heat through. Add meat mixture into crust. Bake, uncovered, in 350° oven for 20 minutes. Sprinkle mozzarella cheese on. Bake 5 minutes longer,…

    Strawberry Rhubarb Cheesecake Bars

    Over the years, if you have followed my recipes you know I have to add a rhubarb recipe at least once during the spring or summer! I love it and it is a staple on almost every farm in the mid-west!
